A new take on an old classic, the clever dripper produced a great cup of coffee. It brews through infusion, a style most often seen in the french press. Beacuse it filters through a paper filter, though, it eliminates the siltiness of the french press and brings more clarity of the flavors. We think you'll love it!


For a 11.5 ounce:

You'll Need:

Coffee: 22 grams, freshly ground slightly finer than french press
Water: 11.5 ounces
Filter: #4 Melita filter

Step 1: Begin by pre-wetting the filter completely. You want to pour plenty of hot water through the filter to both pre-heat the clever and wash away any paper taste. Drain the clever after the filter has been fully wetted.

Step 2:
Place the clever on top a scale. Pour the freshly ground coffee into the filter and tare the scale.

Step 3:
Pour 1.5 ounces of water over the grinds and start the timer. Let sit for 30 seconds.

Step 4:
Pour 10 ounces of water over the grinds focusing your pour on the center. You should reach the total weight of 11.5 ounces at about 60 seconds.

Step 5:
Let the clever sit. At 2:45, place the dripper over your cup. It should finish draining at 3:25-3:35. If it finishes early, tighten up your grind. If it finishes late, coarsen up your grind.
